Grevenbroecker cheese, pear and orange in red wine, salad of figs and Reine Claude plum

Recipe (4 people)

Pear and orange in red wine

2 pears // 2 oranges in thick slices // 2l red wine // 200 g honey // 1 cinnamon stick // 2 star anise // 3 cloves // 1 vanilla pod

Peel the pears. Bring the wine with honey and aromatics to the boil. Add the pears and
orange slices and boil for about 2 minutes. Turn off the heat and leave to steep for 24 hours.
Cut the pears into 8 wedges and sieve the red wine sauce.

Fig and Reine Claude plum salad

3 fresh figs // 6 Reine Claude plums // 3 tablespoons liquid honey // 2 tablespoons sushi vinegar

Cut the figs and plums into wedges and then marinate them in the honey and sushi vinegar.
